Cains offering was rejected simply because he brought the wrong sacrifice, it won’t do to bring our own works to God, he knew what was prescribed but pride and self righteousness led him to bring the works of his own hands

By faith Abel offered unto God a more excellent sacrifice than Cain, by which he obtained witness that he was righteous, God testifying of his gifts: and by it he being dead yet speaketh. Heb-11:4

Sounds probable…I think it had to do with the fact that blood has always been the sacrifice and atonement offering and also that God fore knew Cains heart. God knew the hatred and resentment that Cain held in his heart towards Abel. I also believe that Cains produce was of inferior quality whereas Abel’s offerings were of fine quality and of his most fatted livestock. It was more of the condition of the heart that was being judged opposed to the actual offering
