What is the best approach to take when investigating the evidence for the Resurrection?

There are 2 things. 1. Look at the eye witnesses of the resurrection. Scripture specifically mentions 500 people. However, we can concur that more people saw Him because of the way people recorded things in the past. Woman and children were more than likely opted out of that record. You cannot bypass 500 + people from seeing Christ alive after his death.
2. Look at the trend of the recordings outside of scripture. We can conclude based off of each record of the life of Jesus, his death and resurrection that it stays the same. You can see that record through looking at the students of the disciples. Each of those disciples had students who were taught about Jesus and what they witnessed. Those students turned around and taught the same way to their students and so on and so forth. We see this trend where the accounts do not change. These accounts also changed lives and brought people to Jesus. They then layed down their lives for Him.
