If God is a Trinity why doesn’t Genesis 1 go on to say: ‘So God created man in Their own image, in the image of God They created him; male and female They created them’?

Actually the Hebrew has strong implications of a single God with the nouns, but plural verbs.
Which is incredibly uncommon, It’s strongly implies a single God yet multiple. The best way we have to describe that is the Trinity. -

Why don’t you look at John 1:1-3, as progressive revelation shows that the Father and Son (Word) are separate persons in the Godhead.

Because in Genesis (Old Testament) the Trinity was not completely realized until the revelation of Christ in the New Testament, and the sending of the Holy Spirit in Acts. We, today, have revelation of both Books. But in Biblical times, those living in the Old Testament era had no knowledge of the New Testament. Though the Trinity was implied. It wasn’t completely realized until arrival of the 2nd Person (Christ) & 3rd Person (Holy Spirit) of the Trinity!

Well, all I know is that, for example, Dr. Arnold Fruchtenbaum, from a linguistic point of view, shows repeated examples of the singular and plural used in connection with Deity, noting that both the Unity of the Godhead along with the plurality of its persons, follows in the Hebrew language. Dude, please go and read Scripture again. Are you aware of the meaning of the word Elohim? did you know it’s a compound word, a plural? Did you know it actually reads
“Let us make man after OUR immage and likeness”?

Now the answer to your question are first in verse 26,Job 33:4 and Hebrews 1:8 and Hebrews 10. The clue is the word”their” if God is single person only, the grammatical will be like this, I will create man in my image and likeness, the construction must be third person singular pronoun. But as you can see, the construction is let us created man in our image and likeness in verse 26. The pronoun us and we are first person plural.
Now the question is to whom God has spoken who has the power to create the universe and mankind?
The answer will be found on Job 33:4 the Holy Spirit and Hebrews 1:8, 10.Now in verse 27 the grammatical construction is different the plural us and our are shifted into singular pronoun his.
Throughout the Old the Testament the first and third person singular pronoun is used to describe that God is one. Eventually as God progressively reveled himself to mankind the appearance of Holy Spirit and the Messiah particularly in the New Testament that God are three persons the Father, Son and Holy Spirit and they have united God-ship.
Try to evaluate the verses that against your doctrine. -

Genesis 1 says that God (Father) spoke (Son as Jesus is the Word-John 1) and the Spirit (Holy Spirit) hovered over the waters. This shows the trinity being involved in creation.

Jews were not and are not trinitarian. The old testament authors clearly had something unitarian in mind. Whether God was talking in the “majestic plural” it’s called or whether or not he was talking to his heavenly host, the entire rest of the old testament is unitarian. If I were a trinitarian, I still wouldn’t use old testament scriptures as proof text because it’s not within appropriate context.

I do agree with you that they them, he him, she her pronouns refer to persons, not things and so if God is a plurality of persons, them would have been used. Not him. Just as the Senate, for example, is one entity which is comprised of a collection of persons would be called them or they. “They voted on a law” for example. While God is indeed one being on trinitarianism, he is still three persons and so if Trinitarians want to defend genesis as a proof text, then we need an explanation as to why he is ever referred to as just he when speaking as God.

YHWH is referring to the elohim. Not the Trinity. The Father, Son and Holy Spirit are all God – the Trinity – there is no need to let one know what the other wants to do as the 3 persons are co-equal in that respect due to being 1 being. -

Elohim can be be used in plural or singular. One God (Elohim), three persons (same essence in one God, Elohim). You’ve shown in your own meme that this is expressed.
