This epoch, known as 1 Tishri AM 1, is the tabular date used as the starting point for the modern Hebrew calendar. Interestingly, this tabular date actually predates the traditional Jewish dates for Creation, which are typically placed on 25 Elul AM 1 or, for a minority, 25 Adar AM 1. So, while we often think of Creation as the beginning, the calendar itself uses a slightly earlier mathematical starting point.
