Besides the bible, is there a Systematic Theology book that gives the doctrines, gives an explanation of what they are, gives a definiting of each one, gives why we believe them, gives this information all according to scripture with scripture references, and leaving all the commentary out of it?

Get and read a little book called Rightly Dividing the word of Truth, by C.I. Scofield, It’s out of Print now, but several Sites have it Available for download.

The closest I can think of is Against All Heresies by Ireneus of Lyon or City of God by Augustine. I’ve heard good things on this respect about Jerome.
